If you believe transubstantiation is true, then what do you do with the leftover bread and wine after mass?

If you believed in transubstantion, there would be no leftover bread or wine. But you would, however, put what remains of Christ's Body in the Tabernacle (reserve Sacrament) and the priest, deacon and/or lay eucharistic ministers would consume the rest of His Blood.

Andy's correct. The reserve Sacrament can be used for lay eucharistic ministers or priests to give communion to infirm parishoners, etc. They are supposed to gauge the crowd and not consecrate too much wine because they have to consume the excess. You can see how that can lead to abuse.

Something which sounds great in theory but which could be really hard to do in practice. Especially since undershooting would be a lot worse. :-p

That is what I thought at first, but it really is not once you get the hang of it. I can almost gauge an audience in my sleep now for having been at so many Eucharists.
Undershooting only really happens in large congregations (unless you have a mathematically-challenged priest). If a priest undershoots, he can simply pull from the reserve Sacrament that I mentioned above, even if he runs out of the Blood. As long as you receive at least in one Kind, you receive Christ.

Actually, there still would be leftover bread and wine; you would simply hold a contrary (and false) belief. :)

Yes, I should have said, "If you believed in transubstantion, you would believe there would be no leftover bread or wine." I noticed it after I typed it and was wondering why you didn't jump on that one yet.
